Smothered Chicken in Cream of Mushroom

A few year ago I hosted my extended family and a friend from Atlanta, Georgia for the holidays. While enjoying time off from work, we spent our days touring the capital and the nights feasting on cultural foods; dishes including Nshima and Zambian pan fried chicken made the list. As I do with all my guests, I asked my friend Pat*, to prepare one of her favorite cultural dishes. She introduced me to her version of smothered chicken, a Cajun dish typically served over white rice. Smothered chicken calls for the browning of the pieces of chicken and then smothering them with gravy before baking them in the oven. Pat was not Cajun, she was an African American lady, a southern belle, who enjoyed life, travel and making friends from different cultures. I must say she pulled off this recipe perfectly. I was introduced to a chicken dish which is both rich in flavor and comforting, especially during the cold winter months.

Pat passes away in December 2015. She has left with me memories of her zest for life, culture, community, and adventure. Pat will be dearly missed.

Smothered Chicken in Cream of Mushroom

A chicken dish made by browning chicken and then smothering it in a sauce, in this case, cream of mushroom
Ingredients
  • 2 lb. chicken pieces (preferably winglets)
  • 1 can (15 oz.) cream of mushroom
  • ¼ cup water
  • ½ cup all-purpose flour
  • ½ cup of vegetable cooking oil
  • 1 tsp, black pepper
  • 1 tsp. cayenne pepper
  • ½ tsp. season salt
  • 1tsp salt (to taste)
  • 1 spring onion (optional, for garnish)
Instructions
  1. Preheat the oven to 350F.
  2. Place chicken pieces in a bowl and season with salt and pepper. Add cayenne as well and mix.

  4. Place all-purpose flour in another mixing bowl. Transfer individual pieces of the seasoned chicken to this bowl and coat evenly with the flour.

  6. Fry the chicken in a skillet on medium heat for about 10 minutes on each side or until brown. Transfer the chicken from the skillet to a baking dish or pan.

  8. Pour out the oil from the skillet, leaving only about ¼ cup. Add 2 tbs., of the remaining flour and brown on medium heat, mixing constantly to avoid burning the roux.

  10. Empty cream of mushroom into a container and mix with water until smooth. Add the cream of mushroom mixture to the roux and let it simmer while mixing for about 2 min.
  11. Pour the gravy over the chicken in the baking dish and cover with foil paper. Bake for approximately 25 minutes.

  13. When ready, serve your smothered chicken with rice or potatoes and seasonal vegetables.
